The Morsø Forno is an award-winning Danish designed cast iron outdoor oven. It spreads heat perfectly throughout, making it ideal for cooking pizzas, fish, meat and more.
The Morsø Forno outdoor oven is a stylish modern cast iron oven, that can do a whole lot more than just produce great pizza.
The inbuilt pizza stones which make up the floor of the oven are designed to heat up and be cooked on directly producing crisp Italian style bases. However you can do a lot more with the Forno and many of our customers find that once they have mastered wood-fired pizzas, they have been bitten by the outdoor cooking bug!
Adding the Tuscan Grill (which is included in both of the Deluxe packages) allows you to cook meat, fish and shellfish over the fire.
With the addition of the oven door, you can use your Morsø Forno as a smoke oven, to roast and to bake.
Morsø’s cast-iron cookware can also be used in the oven, so you can create casseroles and roasts.
If you want inspiration of just how much you can cook in a woodfired oven (from Brownies to Boston baked beans!) we recommend you check out Holly & David Jones excellent ‘Wood-Fired Oven Cookbook‘
How does a wood-fired oven work?
In a wood fired oven, a fire is lit using firelighters (we recommend all natural ones) and kindling inside the open space of the oven. The fire can be at the back or sides. Once the fire is established, small kiln dried logs are added. The fire heats the inside of the oven but also heats the surface too. In the case of the Morso Forno the base of the oven is made up of a set of pizza stones which tolerate high temperatures and are porous drawing any moisture away from the bottom of the pizzas and ensuring a crisp base.
What is special about cooking in a wood-fired oven?
You can cook anything you can cook in a regular oven in a wood-fired oven, but often the results are unlike anything you get cooking indoors. Speaking to the Daily Telegraph David Jones of Manna From Devon explained it like this…
“There are so many different things you can do on them, from pizza to whole fish. You can cook bread with the kind of crust you would never get in a regular oven. You can close the door for 24 hours and get amazing braised dishes. It’s a fun way of cooking with a 6,000-year-old tradition.”
Cooking with fire ensures the top of dishes becomes toasted too, perfect for pizzas, creating a caramelised topping for fruit tarts or as David mentioned crisping up any sort of bread crust.
Are they easy to keep clean?
Very. The high temperatures inside a wood-fired oven mean that the inside self-cleans. As for the oven floor, if you’ve used pizza stones before you’ll be familiar with the fact that they discolour with use. In fact, some people regard the darker surface like a bit of a badge of honour, showing how well used the stones are. Pizzas stones should never be cleaned with detergent, they are porous and will absorb the cleaning materials and taint the taste of your food.
Does the outside of the Forno go rusty?
The Morso Forno oven is made from cast iron with a protective painted surface. Over time if the painted surface is damaged (such as stones being flicked up by lawnmowers) small spots of surface rust can appear, these are easy to repair.
Every Forno oven comes with a maintenance kit, the supplied abrasive sponge can be used to remove the light surface oxidisation and the spray paint which is coloured matched to the oven can be used to recoat the area. The beauty of these ovens is that they can be maintained so easily and by spending just a few minutes caring for them at the start of every season you Forno will keep looking as good as new.
In addition, you can further protect your Forno by using a cover when it’s not in use.
How long does it take to make pizzas in them?
It takes about 45 minutes to bring your oven up to temperature and about a minute to cook each pizza. However it can take longer to cook pizzas if the oven is not up to temperature.
Can I leave the Morsø Forno outside all year round?
Yes you can, in fact, many of our customers don’t just leave them outside, they also cook in the oven all year round.
Do I need any accessories?
If you choose either the Deluxe Garden or Deluxe Terra set, your Forno will come with a range of accessories including the door, pizza peel, flue, ash scraper, tongs and cover. In addition to this, we recommend that you consider purchasing the Grill Cocotte for Forno oven, suede grill gloves and a laser thermometer (widely available)
